A Recipe wot I Made up

This could be described as posh cheese on toast or poor-man's pizza.

You need:

  • 1 tomato finely chopped
  • 1 pepper (green for colour) finely chopped
  • 1 red onion...yep you guessed it, finely chopped
  • 3 or 4 sun dried tomatos, finely chopped
  • 1 clove of garlic, crushed (or finely chopped)
  • black pepper to taste
  • grated cheese
  • 2 long rolls or baguette
You could add spring onions, chilli, fresh herbs like chives, coriander, or mint for something different.

Mix the chopped ingredients, add pepper and cheese. You'll note I didn't specify how much. That really depends on how much you like your cheese. I personally would grate the same amount of cheese to salad ingredients and then grate a third more.

Heat your oven (or grill), split the rolls and pile on the ingredients. If you're a sensible bunny, you'd put the rolls on a baking tray first. Put in oven until the cheese melts into a yummy, gooey mass and is bubbling away nicely.

Eat, preferably with a glass of naughtiness, good company and follow with lashings of laughter.

    Mmmm sounds lovely - I love made up recipes or adapting existing ones (often quite considerably) to my taste or what's in my cupboard, which horrifies the other half and I call 'making it my own'.

    Here's a recent fave:

    Tagliatelle
    1 Chicken breast per peson - cut into pieces
    Chop into slices assortment of veg (I use red, green, yellow peppers, red onion, chestnut mushrooms)
    1/2 tub creme fraiche
    juice and zest 1/2 lime
    sprinkle of chilli (dried or fresh to your favoured hotness)
    Chopped coriander

    1. Fry chicken until cooked, add veg and chilli and fry until cooked.
    2. Stir in creme fraiche and heat through
    3. take pan off heat, stir in lime juice and zest and coriander
    4. mix everything with some tagliatelle and serve

    It's really fresh tasting and obviously can be spicy but the creme fraiche counteracts the heat and very yummy!

  2. NM that sounds delicious!!! You're both making me hungry. I make a nice veggie casserole thing.

    A tin of chick peas
    A tin of tomatoes
    Whatever veggies you have - chopped (I usually use carrots, mushrooms, a leek/spring onions and a red/green pepper because I seem to always have them in the fridge)
    4-5 dried apricots - chopped
    a good squirt tomato puree
    chilli powder/piri piri/paprika - all or some - it's up to you.
    Worcestershire sauce
    veggie stock cube
    salt and pepper.
    Chicken chopped - optional

    Drain the chick peas and put everything in a pyrex dish. Mix well and put the lid on. Bake for about 20mins at about 180-200C. Take the lid off dish and stir. Check seasoning and adjust. Cook until it looks done. (Sauce thickened to your own personal taste or you get too hungry) (about 40 mins in total)

    Serve with plain cous cous.

    It's yummy cold tto and I often have left overs the following day for lunch.

    Roses - hope it goes ok, I was a bit vague on quantities, but this is a build it up, knock it down recipe depending on how many people there are. For 2 of us I use approx 1/2 tub creme fraiche

    I feel strangely nervous about someone trying my made up recipe but he other half and i like it - let us know how you get on

  5. NM ~ That's the way I prefer recipies. I get nervous when I read '4 oz flour, 2 oz sugar...' I hate weighing things. My butcher and I do this mime thing when I say how much meat I want. I'll probably tackle it Sunday evening, I'll let you know how it goes.
